PINK CHEF's HOT CHOC FUDGE PUDDING

For all choc nerds missing Mum's cooking here is a wee treat for you.

All you need is:
1 Tablespoon Cocoa
1/2 cup Milk
1 Cup Flour
2 Teaspoons baking powder
1/2 cup sugar
Vanilla essence (a few drops) _ not absolutely necessary

Turn oven up to full bore, on bake (fan bake if you have it) , 180 degrees celcius.
Mix dry ingredients together. Melt butter, add milk and vanilla and mix into dry ingredients.
Grease dish, put mixture into dish.
Mix 1/2 cup with 1 dessertspoon Cocoa and sprinkle over top.
Lastly pour 1.5 cups of boiling hot water over all in dish.

Bake in oven for about 40 mins.
I like it on it's own but have been known to add icecream, must be Deep South Vanilla!
